All egg production units must be registered with the Department. They must each have a distinguishing number which will be used to trace eggs back to the farm where they were produced. This enhances food standards by allowing traceability and it is required by law.
Food production standards
For table egg production there are specific requirements laid down in EU and national legislation such as salmonella monitoring, hygiene standards and marketing standards. Building structures should be designed to meet these requirements.
Buildings must meet welfare requirements and facilitate internal environmental controls regarding ventilation, temperature control and air movement. If the applicant proposes to grade and pack eggs from their production unit, a separate application for authorisation as an egg packing centre is required.
The Department should be notified in advance of any proposed structural alterations or any further development of egg production units after official registration has been granted.
